The current long-term stable version of Java is version 11. This offers a number of improvements over Java 8, not least of which is a Java module system. Selenium 4 ships with support for the module system. So it's easy to use it. And we're all set for when Java 17, the next LTS release, ships in September.
Right now, Selenium continues to support Java 8, we know that many of our users are stuck and haven't quite finished the migration to Java 11 yet. However, at some point, probably when Java 17 is released, we'll bump the minimum version to Java 11. If you're not already off Java 8, now is the time to start thinking about how to make that change.
